Herbed Rice
ingredients
¼ c unsweetened shredded coconut
1½ tsp coconut oil, melted
⅓ c basil, chopped
¼ c mint, chopped
¼ c cilantro, chopped
3 tbsp shallots, chopped
2 tbsp minced lemongrass
2 tsp lime zest
½ tsp sea salt
¼ tsp pepper
3 c jasmine rice, room temperature
2 tsp fish sauce
1 tbsp lime juice
Herbed Rice
Rice directions
Step 1
Rinse rice under cold running water until water runs clear.
Step 2
Combine 1 cup of rice, 1½ cups of water, and a pinch of salt in a medium saucepan. Bring to a boil over medium-high heat.
Step 3
Once boiling, immediately turn the heat to low and cover with lid.
Step 4
Let simmer on low for 15–18 minutes. Do not lift the lid or stir, as this releases steam and causes uneven cooking. Remove pot from the heat and let rest, covered, for 10 minutes. This allows the moisture to redistribute for a fluffy texture.
Step 5
Remove the lid, fluff the rice with a fork.
DIRECTIONS
Step 1
In medium skillet, over medium heat add coconut and ½ tsp coconut oil. Cook, stirring often until coconut begins to brown, approximately 2–3 minutes.
Step 2
Continue to cook, stirring constantly until coconut is golden brown, 2–3 additional minutes. Remove from heat.
Step 3
In large bowl, mix chopped basil, mint, cilantro, shallot, lemongrass, lime zest, salt, and pepper.
Step 4
Add rice, 3 tbsp toasted coconut and remaining 1 tsp coconut oil; toss to combine. Add fish sauce and lime juice; give final toss.
